Elumichham Pazham Saadham (Lime Rice - Tamil Style)

5 cups
Colam rice
4 cups
turmeric powder
1 tsp
vegetable oil
1/2 cup
mustard seeds
1 tsp
Bengal gram
1 tbsp
split skinned black gram
1 tbsp
curry leaves
1 sprig
green chillies chopped
4.75 tsp
lemon juice
1/3 cup + 1 tbsp


Pour water into cooker. Bring to boil on high heat. Add rice and turmeric powder. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 2 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. Fluff up rice gently with a fork to separate grains. In a pan, heat oil for about 2 minutes. Add mustard seeds. When crackling, add Bengal gram and black gram. Stir fry till golden brown. Add curry leaves and chillies. Stir for a few seconds and pour over rice. Mix salt with lemon juice and pour over rice. Mix. Serve hot.
