Aloo Gobi Ki Tehari (Vegetable Pilaf - U.P. Style)

vegetable oil

peeled and cut into quarters
2 large ( 300 g)
cauliflower cut into chunky flowerettes
1/2 kg
Basmati
rice
3 cups
dry ginger powder
1 tsp
asafoetida
1/4 tsp
red chilli
powder
2 tsp
turmeric powder
1 tsp
salt
5 tsp
water
4 cups
garam masala powder
1 tsp
Method
Heat oil in cooker for about 3 minutes. Add bay leaves, cinnamon and cloves. Stir for a few seconds. Add potatoes and cauliflower. Stir fry for about 2 minutes. Add all other ingredients except water and garam masala powder. Stir fry for about 3 minutes. Add water. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes. Remove cooker from heat. Allow to cool naturally for 5 minutes. Press finger-tip control/lift vent weight lightly to release pressure. Open cooker. Place tehari on serving dish. Sprinkle garam masala powder. Serve hot.
