Ven Pongal (Rice Cooked with Split Green Gram)

Ingredients

peppercorns
1 tbsp
cumin seeds
1 tbsp
ghee
3/4 cup + 1 tbsp
split skinned green gram
3/4 cup
Colam rice
2.5 cups
salt
3.5 tsp
water
6.5 cups
cashew nuts broken into pieces
1/4 cup
turmeric powder
3/4 tsp

Method

Grind peppercorns and cumin seeds into a coarse powder. Heat 1 tbsp ghee in cooker for about half minute. Add green gram. Stir fry for about 3 minutes. Add rice, salt and water. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes. Remove cooker from heat. Allow to cool naturally for 5 minutes. Press finger-tip control/lift vent weight lightly to release pressure. Open cooker. In a pan, heat remaining ghee (3/4 cup) for about 2 minutes. Add cashew nuts and fry till golden brown. Remove pan from heat. Add turmeric, powdered spices and pour over pongal. Stir. Serve hot.
