olive oil

onions thinly sliced
2 medium (10 oz / 300 g)
eggplant cut into 0.25 inch (1 cm) cubes
1 medium (10 oz / 300 g)
green peppers de-seeded and cut into 0.5 inch (1 cm) pieces
1 medium (4 oz / 120 g)
tomatoes peeled and cut into eighths
2 large (1.25 lb / 550 g)
zucchini cut into 0.5 inch (1 cm) slices
1 (0.75 lb / 350 g)

parsley chopped
1 tbsp


Recipe can be reduced to one-half by reducing all ingredients proportionately. Heat oil in cooker for about 1 minute. Add garlic and onions. Stir fry till onions are transparent. Add remaining ingredients except parsley. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 4 minutes. Remove cooker from heat. Press finger-tip control/lift vent weight lightly to release pressure. Open cooker. Remove vegetables with slotted spoon and place on serving dish. Keep hot. Return cooker to high heat and boil till liquid is reduced to half, stirring occasionally. Pour over vegetables. Serve hot, garnished with parsley.
