Potato and Cheese Soup

potatoes peeled and cut into cubes of about 1 inch (2.5 cm)
4 large (2.25 lb / 1 kg)
onion chopped
1 small (4 oz / 120 g)
2 tsp
1.5 cups
4 cups
1/4 tsp
cheddar cheese grated
3 cups
parsley chopped
1 tbsp


Recipe can be reduced to one-half by reducing all ingredients proportionately. Put potatoes, onion, salt and water in cooker. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. Mix the mixture smooth in a blender or mash it through a sieve. Return soup to cooker. Add milk and pepper. Place cooker on medium heat and bring to boil, stirring constantly. Add cheese and stir till cheese melts. Serve immediately, garnished with parsley.
