Mocha Ghanto (Banana Flower - Bengal Style)

Grind mustard seeds and sugar into a paste, adding a little water (2 tbsp) from time to time. Grind cardamoms, cloves and cinnamon into a powder. Mix coconut and milk. Put remaining water (3/4 cup), banana flower, turmeric powder and 2 tsp salt in cooker. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 8 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. Transfer banana flower to a colander and squeeze out water. In a large pan, heat oil for about 4 minutes. Add bay leaves and cumin seeds. Stir for a few seconds. Add potatoes. Stir fry till light brown. Add mustard paste and banana flower. Stir fry for about 2 minutes. Add coconut-milk mixture, chilli powder and remaining salt (1 tsp). Cook till liquid dries up (approximately 3 minutes), stirring constantly. Add powdered spices. Stir. Serve hot.
