Dutch Beets

Ingredients

water
1.5 cups
beets
10 large (3.5 lb / 1.5 kg)
butter
1/4 cup
flour
3 tbsp
hot water
2 cups
sugar
3 tbsp
salt
1 tsp
pepper
1/4 tsp
vinegar
2 tbsp
onion finely chopped
1 small (1 oz / 30 g)

Method

To cook reduced quantities : do not reduce water at all. Put water and beets in cooker. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 16 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. Drain, peel and cut beets into 1 inch (2.5 cm) cubes. In a large pan, melt butter on medium heat. Sprinkle in flour and cook on low heat, stirring constantly with a wire whisk, for about 3 minutes. Remove pan from heat. Still using whisk, gradually add hot water. Return cooker to medium heat. Cook, stirring constantly, till sauce thickens (approximately 5 minutes). Add beets and all other ingredients. Stir. Simmer on low heat for about 10 minutes, stirring occasionally. Serve hot.
