Aloor Potoler Rasa (Potato and Parwal Curry - Orissa Style)

green cardamoms peeled
5 sticks (2.5 cm each)
vanaspati ghee
6 tbsp
whole dry red chillies
cumin seeds
1 tsp
onions chopped
2 large (300 g)
potatoes peeled and cut into 4 cm long and 1 cm thick slices
5 large (0.750 kg)
parwal scraped and cut across into halves
3/4 kg
turmeric powder
1.25 tsp
red chilli powder
1/2 tsp
4 tsp
3 cups


Grind cloves, cardamoms and 3 sticks cinnamon into a powder. Heat vanaspati in cooker for about 2 minutes. Add whole chillies and cumin seeds. Stir for a few seconds. Add remaining cinnamon (2 sticks), onions and fry till onions are golden brown. Add powdered spices and all other ingredients except water. Stir fry for about 3 minutes. Add water. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 2 minutes. Remove cooker from heat. Press finger-tip control/lift vent weight lightly to release pressure. Open cooker. Serve hot.
