Aloor Dum (Spicy Potatoes - Bengal Style)

Ingredients

onion
1 medium (100 g)
ginger

cloves

3 sticks (2.5 cm each)
water

potatoes
1.5 kg very small, even sized
turmeric powder
1.75 tsp
mustard oil
2 cups
bay leaves

cumin seeds
1 tsp
onion chopped
1 medium (100 g)
tomato chopped
1 large (150 g)
red chilli powder
3.5 tsp
cumin powder
2.5 tsp
coriander powder
1.5 tsp
salt
1 tbsp
sugar
1 tsp
ghee
2 tbsp

Method

Grind onion and ginger into a paste. Grind cloves and cinnamon into a powder. Put 1 cup water and potatoes in cooker. Close cooker. Bring to full pressure on high heat. Reduce heat and cook 1 minute. Remove cooker from heat. Press finger-tip control/slightly lift vent weight to lightly release pressure. Open cooker. Remove and peel potatoes. Sprinkle
