Ragda (Spicy White Peas)

Ingredients

1/2 cup + 1 tsp
whole dry red chillies

dry white peas soaked overnight or in hot water for 2 hours and drained

sodium bicarbonate
a pinch
mustard seeds
1 tsp
asafoetida
1/4 tsp
curry leaves
1 sprig
tomatoes chopped
3 medium (350 g)

tamarind soaked in 0.5 cup hot water for 15 minutes and pulp extracted

Method

Grind ginger and green chillies into a paste. In a pan, roast together peppercorns, coriander seeds, 10 cloves, 4 sticks cinnamon and 2 tsp cumin seeds. Remove and keep aside. In the same pan, add 1 tsp oil and roast 9 red chillies. Grind together all roasted ingredients into a powder. Put 3 cups water, peas and sodium bicarbonate in cooker. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 10 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. In a large pan, heat remaining oil (
