chicken breasts skinned and cut into 2 inch (5 cm) pieces
2 (1.5 lb / 675 g)
olive oil
3 tbsp
chorizo sausage cut into 1/2 inch (1 cm) slices
1 large (4 oz / 120 g)
onion chopped
1 small (4 oz / 120 g)
green onions including tender green portion sliced
1/2 cup
long-grain rice
1.5 cups
green pepper de-seeded and coarsely chopped
1 medium (5 oz / 150 g)
pimiento chopped
1 tbsp
1.5 tsp
1/2 tsp
shrimps shelled and de-veined
12 (4 oz / 120 g)
mussels scrubbed
clams scrubbed
saffron ground and dissolved in 2 tbsp chicken stock
1/2 tsp
chicken stock fat removed
1 1/3 cups
lemon juice
2 tbsp
parsley chopped
1 tbsp


Recipe can be reduced to one-third by reducing all ingredients proportionately. Group chicken into 2 batches. Heat oil in cooker for about 2 minutes. Lightly brown and remove each batch onto paper towels to drain off excess oil. To the remaining oil in cooker, add sausage, onion and green onions. Stir fry till onions are transparent. Add rice and fry till rice turns opaque approximately 3 minutes). Remove cooker from heat. Add chicken and remaining ingredients except parsley. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes. Remove cooker from heat. Allow to cool naturally for 5 minutes. Press finger-tip control/lift vent weight lightly to release pressure. Open cooker. Serve hot, garnished with parsley.
