Matimah Khar (Black Gram with Ash Gourd - Assam Style)

Grind ginger into a paste. In a pan, roast cumin seeds and grind to a powder. Put ginger paste and all other ingredients in cooker except oil, powdered cumin and those for tempering. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 5 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. Add oil. Stir. For tempering, heat oil in a pan for about 1 minute. Add mustard seeds. When crackling, add garlic. Stir for a few seconds and pour over matimah khar. Add powdered cumin. Stir. Serve hot.
