Black Bean Soup

2 tbsp
onion coarsely chopped
1 small (3.5 oz / 75 g)
celery chopped
2 tbsp
tomato peeled and chopped
1 small (4 oz / 120 g)
black beans soaked overnight or in hot water for 2 hours and drained
3/4 cup
garlic crushed
3 cloves
dry mustard
1/2 tsp
1/4 tsp
chicken stock fat removed
3 cups
dry sherry
1/4 cup
chilli powder
1.5 tsp
orange peel grated
1/2 tsp
1/2 tsp
sour cream


Recipe can be reduced to one-half by reducing all ingredients proportionately. Melt butter in cooker. Add onion and celery. Stir fry till onion is transparent. Add remaining ingredients except sour cream. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 15 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. Serve hot. Garnish each individual serving with a teaspoon of sour cream.
