Aloo gobhi pulao

peeled potato cubes
3/4 cup
cauliflower florets

long grained rice (basmati) , soaked and drained
1.5 cups

cinnamon (dalchini)
25 mm (1 inch)
cloves (laung / lavang)

turmeric powder (haldi)

chilli powder
1 tsp
salt to taste
coarsely crushed papad
2 tbsp


Heat the ghee in a pressure cooker, add the cinnamon, cloves and bayleaves and saute on a medium flame for a few seconds. Add the rice and saute on a medium flame for 1 to 2 minutes. Add the, cauliflower, potatoes, rice, turmeric powder, chilli powder and salt and saute on a medium flame for 1 minute. Add 3.5 cups of hot water, mix well and pressure cook for 2 whistles. Allow the steam to escape before opening the lid. Serve hot garnished with papad.
