Masala Bhath (Spiced Rice with Gherkins)

copra grated
1/2 cup
3 sticks (2.5 cm each)
sesame seeds
1 tbsp
coriander seeds
5 tbsp
cumin seeds
4 tsp
vegetable oil
1/2 cup
mustard seeds
1 tsp
curry leaves
1 sprig
1/2 tsp
green chillies slit
gherkins cut into quarters
200 g
Basmati rice washed and left to drain for 1.2 hour
3 cups
5 tsp
cashew nuts broken into pieces
1/4 cup
3.5 cups
coconut grated
1/2 cup
coriander leaves chopped
2 tbsp


In a pan, roast together copra, cloves, cinnamon, sesame, coriander and cumin seeds till copra is golden brown. Grind roasted ingredients into a powder. Heat oil in cooker for about 3 minutes. Add mustard seeds. When crackling, add curry leaves, asafoetida and chillies. Stir for a few seconds. Add gherkins. Stir fry for about 3 minutes. Add rice. Stir fry for about 3 minutes. Add powdered spices, salt, cashew nuts and water. Stir. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 3 minutes. Remove cooker from heat. Allow to cool naturally for 5 minutes. Press finger-tip control/lift vent weight lightly to release pressure. Open cooker. Serve hot, garnished with coconut and coriander leaves.
